Kale Chips

If your weakness is salty potato chips here is something to try.  Kale is found in your grocer's produce department.  It is a leafy green with a somewhat bitter after taste but if you bake it  the kale becomes crunchy and with the olive oil and salt it just might cure your potato chip craving.  BONUS:  it is loaded with healthy vitamins, minerals, and antioxidants!   Here is how you do it.

1. Rinse the kale.
2. Dry completely and break off leaves into pieces. 
3. Toss in Extra Virgin Olive Oil and sprinkle with salt. 
4. Bake at 400 degrees for 7-10 minutes until crispy. 
5. Remove and enjoy a tasty and healthy snack.
