Healthy Fritatta Recipe
Here is recipe that I use often for a quick, convenient, healthy, and satisfying breakfast. You could also modify ingredients to suit your likes or based on what is available in your kitchen. I freeze and pop in the microwave for 1 minute for quick and easy breakfast.
Friday Frittas
4 eggs
4 egg whites
1 T. milk
freshly ground pepper
1/4 tsp salt
10 cherry tomatoes sliced into quarters
1/4 cup goat cheese crumbles (Trader Joe's)
1 tsp olive oil
1 tsp minced garlic
2 cups baby spinach leaves
Preheat oven to 375 degrees. Spray eight spaces in a muffin tin with cooking oil/spray. Beat eggs and egg whites in a big bowl. Add milk, pepper, salt, basil, tomatoes, and cheese. In a sauté pan, heat oil and sauté garlic for about 2 minutes over medium heat. Add spinach and sauté for another 2 minutes until just wilted. Add the green mixture to the egg mixture. Pour into oiled muffin tin and bake 18-20 minutes until cooked thoroughly. Cool for a few minutes and remove with a soft spatula.
Serve with a spinach salad with roasted sunflower seeds, sliced pear, and a raspberry vinaigrette for a great breakfast or quick dinner.
